KUIH ANG-KOO
Ingredients:
For the dough:
625 g glutinous rice - soaked overnight
1 tbsp cornflour
a few drops red colouring
For the filling:
250g green peas - soak for 4 hrs and remove the skin
270g sugar
vegetable cooking oil
1 or 2 ang-koo moulds
banana leaves to line the moulds
Method:

Method:
- Steam green peas for 40 -50 min, then mash finely. Mix with sugar and dry fry over a low flame until quite dry.
- Drain the glutinous rice and grind finely. Wrap in cheese cloth and squeeze out excessive water.
- Mix the ground glutinous rice, cornflour and colouring. Knead into a dough.
- Divide dough into small equal portions.
- Roll out each portion and place 1 ttbsp filling on it. Draw up the edges to enclose filling and press with ang-koo mould.
- Place on a banana leaf which should be cut slightly larger than the ang-koo mould. Steam for 10-20 min until the kuih is cooked
- Brush with oil, remove from steamer and cool before serving.
*This tea-time treat is usually included in festive spreads as its red flavoured colour depicts good luck and prosperity.*

Blueberry muffins
#This blueberry muffin is easy to make. It's basically for those who are baking for the first time.
*In this recipe u'll be using "Blueberry Muffin Mix". U can buy it from ur nearest cake shop.

110g water
4 eggs

Mix A for 1 min at low speed.
Then with high speed for 4 min.
Add in B and beat at a low speed.
Pour into muffin pan layered with paper cups.
Makes up to 16 muffins

Chocolate Muffins!!!!
Ingredients
- 250g unsalted butter
- 220g caster sugar
- 310g evaporated milk
- 3 eggs
- 330g self rising flour
- 1 tsp baking powder
- 1 tbsp cocoa powder
- 1 tsp chocolate paste
- 100g chocolate chips
- Heat the oven to 170 Degree Celsius.
- Sieve the flour with baking powder and cocoa powder.
- Mix butter with sugar and chocolate paste until smooth.
- Add in the milk little by little and mix it well.
- Add in eggs one at a time and mix till smooth.
- Then add in the sieved flour and mix.
- pour the mixture into the prepared muffin cups, 3/4 full and bake it for about 20 to 25 min.
